Oats with almond milk and raspberries

Here is a recipe for oats with almond milk I often make in the morning for breakfast in the autumn and winter, when the weather is a bit cooler, or for lunch, as the oats feel so warming and nourishing to eat on a cold day. The recipe has just a couple of ingredients (including oats, almond milk, maple syrup or honey, cinnamon, almonds and raspberries) you could hopefully find in your garden or at your local shop and the recipe is quite easy and quick to make in case you don’t have a lot of time in the morning 🕊🌸

Oats with almond milk and raspberries

  • 1 cup of plant based milk (I use unsweetened almond milk, although you could also use a different kind of milk or plant based milk if you would like to)
  • 1/2 cup of rolled oats
  • 1 tablespoon of maple syrup or honey
  • 1 teaspoon of cinnamon
  • fresh almonds (lightly chopped, to sprinkle on the top)
  • raspberries (or a different kind of fruit you enjoy, to sprinkle on the top)
  • 1 extra tablespoon of maple syrup or honey (to drizzle on the top)

Add the plant based milk, rolled oats, maple syrup or honey and cinnamon to a saucepan and cook gently on a medium heat until the oats are softened and the plant based milk has been mostly absorbed, and the mixture is quite thick (about 5 minutes). Stir the oats often to help to ensure the oats do not stick to the bottom of the saucepan. Add the oats to a bowl. Lightly chop the fresh almonds and gather the raspberries, and sprinkle gently over the top of the oats. Drizzle the extra maple syrup or honey on the top and enjoy 🌸

I was inspired to include the maple syrup in the recipe because Ella (from @deliciouslyella, a brand sharing and celebrating plant based food inspiration) often includes maple syrup in baking recipes, or to help to sweeten a recipe. In case you would like to find more plant based recipes, there are a lot of delicious recipes for plant based baking and foods on Ella’s blog Deliciously Ella and on her instagram page @deliciouslyella (please check the links).
