Blueberry bran muffins

Here is a recipe for blueberry bran muffins, from a muffin recipe book from home 🕊🌸 I just made the muffins on Monday and I love the healthy bran flavour, the fluffy texture and the blueberries. Although there are a couple of steps in the recipe, the recipe is quite generous, and the muffins are quite quick to bake in the oven. I sometimes have a muffin for breakfast with a cup of coffee, or for morning or afternoon tea with a cup of tea or herbal tea and the blueberry bran muffins are also quite filling. I hope you enjoy the recipe 🌸

Blueberry bran muffins


  • 2 cups of bran
  • 1 cup of wholemeal flour
  • 1 cup of white flour
  • 1/2 a cup of sugar (I use soft brown sugar)
  • 3 teaspoons of baking powder
  • 1 & 1/4 cups of blueberries (could include fresh or frozen blueberries)
  • 2 teaspoons of baking soda
  • 1 & 1/4 cups of milk (could include plant based milk)
  • 100 g of butter
  • 3 tablespoons of golden syrup (could also include maple syrup)
  • 2 eggs, whisked


Mix bran, wholemeal and white flour, sugar and baking powder in a bowl. Stir in the blueberries. Dissolve the baking soda in the milk. Melt the butter with the golden syrup. Make a well in the dry ingredients and add the milk and baking soda, melted butter and golden syrup, and whisked eggs. Do not over mix. Bake for 15 minutes at 190 degrees c.

(makes about 12 muffins)



When mixing all of the ingredients together just before baking, make sure to mix and fold the ingredients together gently to help to ensure the muffins are fluffy. I also use a light baking oil (grapeseed oil) to lightly grease the muffin tray although you could also use butter or paper muffin cases if you would like to. After the muffins are baked, leave to cool in the muffin tray for about 5 minutes before carefully removing and placing on a rack to cool. The muffins are delicious with a cup of tea, herbal tea or coffee 🕊🌸


As noted in the 100 Best Health Foods book, blueberries are the richest of all fruits in antioxidants. Blueberries are also noted to be high in vitamin C, fibre and carotene, to help to keep eyes healthy. Blueberries can also help to boost the nutritional content of muffins, cakes, crumbles, pies and fruit salads and lose few of their nutrients if frozen.
