Chicken wraps with fresh veggies

Here is a recipe for chicken wraps with fresh veggies, avocado and herbs I created to make for dinner on Wednesday πŸ•ŠπŸŒΈ the recipe has quite a lot of fresh fruits and veggies with a lot of nutrients, including carrots, courgette, tomatoes, cabbage, avocado and white onion, and is also quite quick to prepare as just the chicken needs to be cooked. In case you are hoping for the recipe to be plant based, you could include tofu or a different kind of plant protein, and you could also change the mozzarella cheese for a plant based cheese if you can πŸŒΈ you could also include different kinds of fresh veggies and herbs, including lettuce, red onion, baby spinach, kale or parsley if you would like to.

Chicken wraps with fresh veggies 

Serves 3


For the wraps

  • white jasmine or basmati rice (optional)
  • 1 white onion
  • olive oil
  • about 1/4 of a small cabbage
  • 2 medium carrots
  • 1 to 2 courgettes
  • 2 to 3 medium tomatoes
  • 1 to 2 avocados
  • a fresh lemon
  • fresh coriander
  • mozzarella cheese
  • a pack of soft tortilla wraps (or a different kind of wrap you enjoy)

For the chicken

  • 2 chicken breasts
  • salt and pepper
  • ground cumin, ground cayenne pepper and ground chilli to season
  • grapeseed oil


For the wraps

Prepare the white jasmine or basmati rice in case you are hoping to include rice in your wraps, by cooking the rice in a pot with water, according to the instructions noted on the package of the rice. I used about 1/2 a cup of jasmine rice (before cooking) for about 3 people. Once the rice is cooked, place the rice in a bowl or set aside for building up the wraps a bit later with the fresh fruits and veggies and chicken.

Dice the white onion and add to a pan with about 2 to 3 tablespoons of olive oil. Cook gently on a medium to low heat for about 10 to 15 minutes, until the onions are a light golden colour, add to a plate and set aside for building up the wraps.

To prepare the fresh fruits and veggies, gather the cabbage, carrots, courgettes, tomatoes, fresh lemon and fresh coriander (and other fruit, veggies and herbs in case you are using a couple of different ones) and rinse carefully.

Thinly slice the cabbage until the cabbage is in finely sliced ribbons, peel the carrots and grate the carrots and courgettes using a grater. Dice the tomatoes carefully into about 1 cm pieces and peel and carefully slice or dice the avocados. Cut the lemon in half, and add the fresh lemon juice over the avocados to help to keep them a light green colour. You could also add fresh lemon juice to the other fruits and veggies too.

Grate the mozzarella cheese and arrange all of the ingredients carefully on a large wooden chopping board or on a couple of plates to help to build up the wraps.

For the chicken

Place the chicken on a plate and season carefully on both sides with salt and pepper and lightly with the ground cumin, ground cayenne pepper and ground chilli.

Add about 2 tablespoons of grapeseed oil to a medium fry pan, heat the pan on a medium to high heat and cook the chicken for about 10 minutes (about 5 minutes on each side, turning once). Check to see if the chicken is cooked, and carefully slice on a wooden chopping board.

All of the ingredients are now ready to add to the wraps πŸŒΈ  add the ingredients carefully to the soft tortilla wraps (or different kind of wraps in case you are using a different kind). I often begin with the rice, and then add the fruits and veggies, cheese, chicken and fresh herbs on top.


You could prepare and include any kind of fruit and veggie or plant based protein you enjoy in the wraps. You could also just add salt and pepper to season the chicken before cooking, in case you are hoping for a more gentle flavour. I often use a small bunch of fresh coriander and gently tear off any stems which are quite long. You could also add sour cream, a homemade or bought tomato salsa or a different kind of sauce or salad dressing you enjoy πŸ•ŠπŸŒΈ
