A veggie pizza recipe

Here is a recipe for a veggie pizza I often make for our family for dinner, and made for lunch just a couple of days ago 🕊🌸 the pizza dough is made in our bread maker and the pizza is made with mostly plant based ingredients you could hopefully find in your garden or at your local fruit and veggie market or shop, and you could also change the cheese to a plant based cheese in case you are hoping for the recipe to be plant based 🌸 a couple of the ingredients included on the pizza include a simple home made tomato sauce, red bell pepper, cheese and fresh herbs from the garden, and you could also include any different kinds of ingredients you enjoy, including courgettes, lean protein, rocket, olives, capers, sun dried tomatoes, artichokes and more.

Veggie pizza

(makes 2 medium pizzas)

  • pizza dough (could include pizza dough made in a standard bread maker, carefully made by hand or bought whole from a shop)
  • olive oil
  • 1 white onion
  • 2 to 3 cloves of fresh garlic
  • fresh herbs from the garden (I often use fresh thyme and oregano)
  • 1 400g can of tomatoes
  • salt and pepper
  • 1 red bell pepper
  • cheese (could include mozarella, buffallo mozzarella, any kind of cheese(s) you enjoy or a plant based cheese)
  • fresh herbs to sprinkle on top

Prepare the pizza dough in the bread maker or by hand.

While the pizza dough is being made in the bread maker or resting, heat about 2 tablespoons of olive oil in a medium pan, finely dice the white onion, and finely chop the fresh garlic.

When the pan is warm, add the white onion and cook gently on a medium heat for about 5 minutes, until the onion has softened, and add the fresh garlic and about a handful of fresh herbs. Cook for about 30 seconds, stirring often, until fragrant, and add the can of tomatoes and lightly season with salt and pepper.

Cook on a medium heat for about 20 to 30 minutes, until the tomato sauce has reduced quite a lot, and a lot of the water has evaporated.

Preheat the oven to about 220 degrees c and prepare the red bell pepper by finely chopping into about 2 cm pieces, and the cheese, by grating or gently tearing (and other ingredients in case you are using more ingredients).

When the dough is ready to shape and bake and the oven is preheated, lightly grease a couple of pizza trays with grapeseed oil or olive oil and gently form dough to a large circle shape. Sprinkle lightly with plain flour as you go to help to shape the dough.

Add the homemade tomato sauce lightly onto the pizza dough, with about 2 to 3 cms of room to spare on the outside for the crusts, and then sprinkle over the red bell pepper, cheese (and other ingredients in case you are using more ingredients). Lightly season with salt and pepper and cook for about 10 minutes, until lightly golden and carefully cooked through.

Sprinkle with some more fresh herbs (I often use thyme and oregano) and enjoy 🌸

Do you love pizza a lot too? Are there any different kinds of ingredients you love to include on a pizza?
