One way to note down your gratitude, if you like to physically do it, is in a journal.
I use a lined LEUCHTTURM1917 and each day I will go about setting my intentions and add any to-do list beneath it.
Normally some things stay a constant, but then there are others that when you overcome challenges and obstacles that make you see things in a new light or make you grateful for other things too.
Meditation can help to aline your thoughts with your gratitude. At the beginning of my meditation, I will set the intentions for the day and think about what I am grateful for.
